Perfect summer salad to use up that left over corn on the cob.

Recipe Ingredients for Black bean and corn salad

1 cup Corn, Sweet, Yellow
1 cup Beans, Black, Mature Seeds
1 cup, chopped Peppers, Sweet, Red
2 pepper Peppers, Jalapeno
5 Teaspoon Juice
5 Teaspoon Juice
1 tsp Country Dijon Mustard
1 1tsp Olive Oil
1/4 cup leaves, whole Basil, Fresh
0.25 cup Parsley
1 tbsp Vinegar Balsamic
3 clove Garlic

Recipe Directions for Black bean and corn salad

  1. Combine lemon and lime (either or is fine as well),minced garlic, a dash of oil (sometimes I leave it out entirely), vinegar, and mustard; set aside.

  2. Combine corn, black beans, peppers, and basil and parley (you can substitute whatever herbs you have on hand), in a large bowl; stir to combine.

  3. Poor dressing over and serve. Can be made a day ahead and keeps for several days.
