Recipe Ingredients for Black bean and corn salad

4 ears corn
1 red bell pepper, diced
1/2 cup green onions, chopped
1/2 cup black beans, dried
1/4 cup balsamic vinegar
1 tsp olive oil
1/2 tsp ground cumin
1/2 tsp ground red pepper
1/2 tsp ground black pepper

Recipe Directions for Black bean and corn salad

  1. Combine corn, bell pepper, onions, cilantro, and beans in a medium bowl.

  2. Combine vinegar and remaining ingredients in a small bowl. Drizzle vinegar mixture over corn mixture; toss well. Cover and chill 30 minutes.
