Modified from the allrecipes.com version, this has half the beans and less dressing because I was cooking for only two.

Recipe Ingredients for Black Bean and Corn Salad

2 cup Black Beans
2 cup Corn, Sweet, Yellow
0.25 cup Lime Juice
0.3 cup Olive Oil
1 clove Garlic
1 tsp Salt, Table
0.13 tsp Cayenne
1 avocado, NS as to Florida or California Avocados
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
6 medium (4-1/8" long) Onions, Spring Or Scallions

Recipe Directions for Black Bean and Corn Salad

  1. Mix 1/4 cup lime juice, 1/3 cup olive oil, 1 clove minced garlic, 1 tsp salt, and 1/8 tsp cayenne in a jar.

  2. In a bowl, mix 1 can black beans, 1 can corn, 1 avocado diced, 2 tomatoes diced, 6 green onions thinly sliced, and 1/2 cup cilantro and 1 red bell pepper chopped. I didn't have the last 2 ingredients on hand so they're not included in the recipe/nutrition info.
