Recipe Ingredients for Black Bean and Corn Salad 5 Star

1/2 cup fresh lime juice
1/3 cup olive oil
1 clove garlic, minced
1 teaspoon salt
1/8 teaspoon ground cayenne pepper
30 oz black beans, rinsed
15 oz corn
1 red bell pepper, chopped
2 tomatoes, chopped
6 green onions, thinly sliced
1 avocado, somewhat firm, diced

Recipe Directions for Black Bean and Corn Salad 5 Star

  1. Whisk first five ingredients together.

  2. Combine remaining ingredients except avocado and pour dressing over, stir to coat. Chill so flavors blend. Add avocado nust before serving.
