Black Bean and Corn Salad 1/2 cup servings

Recipe Ingredients for Black Bean and Corn Salad 1/2 cup servings

1/3 cup lime juice
1/4 cup olive oil
2 cloves garlic
1/2 tsp salt
1/8 tsp cayenne pepper
16 oz black beans
1 1/2 cups corn
1/2 cup green onions, chopped
2 Jalapenos
3 plum tomatoes
1/2 avocado, chopped
1/2 cup cilantro
1/4 cup basil, chopped

Recipe Directions for Black Bean and Corn Salad 1/2 cup servings

  1. Combine lime juice, olive oil, garlic, salt, and cayenne in a small jar. Cover and shake until ingredients are well mixed

  2. In a large bowl combine the beans, onions, Jalapenos, tomatoes, avaocado, cilantro, and basil. Pour lime dressing over salad and stir. Add black pepper to taste.

  3. Makes 12 half cup servings
