Recipe Ingredients for Black Bean, Corn and Rice Salad

1 cup rice
15 oz black beans , rinsed and drained
1 cup corn
1 scallion, chopped
2 tbsp cilantro, fresh, chopped
1 tbsp fresh lime juice
1 tsp lime zest, finely grated
1/4 tsp table salt, finely grated
1/4 tsp black pepper, freshly ground to taste

Recipe Directions for Black Bean, Corn and Rice Salad

  1. Cook rice according to package directions.

  2. While rice is still warm, stir in beans, corn, scallions, cilantro, lime juice and zest

  3. Season to taste with salt and pepper.
