Black bean, corn and rice enchiladas with green enchilada sauce.

Recipe Ingredients for Black Bean, Corn and Rice Enchiladas

1/2 cup rice, uncooked
1 tsp oil
1 c chopped onion
3 cloves garlic, minced
1 c frozen corn kernels
2 cups black beans,(2 cans) drained and rinsed
2 tsp ground cumin
1/4 cup chopped green chiles, (1 can (4.5 oz)) drained
1 c shredded Monterey Jack cheese
12 corn tortillas
1 c green enchilada sauce

Recipe Directions for Black Bean, Corn and Rice Enchiladas

  1. Cook rice (optional- add fresh cilantro and lime juice)

  2. In a medium sized skillet, heat oil over medium heat. Stir in onion and garlic and sauté until aromatic and onions are softened. Add frozen corn, sautéing until softened.

  3. Stir in beans, cumin, and green chiles. Cook for ~5 minutes until warm; partially mash beans

  4. Remove the pan from the heat, mix in 1/2 cup cheese. Season with salt & pepper as desired.

  5. Dip tortillas in sauce -

  6. Spoon rice and black bean mixture down the center of a tortilla. Roll up and place seam side down in baking dish. Repeat with remaining tortillas.

  7. Pour green chile sauce over the tops of the enchiladas. Cover with foil and bake for 15 minutes. Remove foil, sprinkle with remaining shredded cheese and bake for 10 more minutes until cheese is melted.
