My own creation to go with Sante Fe Chicken

Recipe Ingredients for Black Bean and Corn Relish

15 oz black beans
2 c frozen corn
1/2 small onion, diced
1/2 med tomato, diced
1 tsp lime juice
1/2 tsp garlic powder
1/8 tsp cumin
1 T cilantro

Recipe Directions for Black Bean and Corn Relish

Place black beans and frozen corn in colander and rinse with room temperature water. Add diced onion, tomato, cilantro, lime juice and spices and stir together. Refrigerate at least 2 hrs or overnight (better).
