Recipe Ingredients for Black bean and corn quesadillas

2 cup Black Beans
2 cup Frozen Cut Corn
0.5 oz Coriander Leaves
2 cup, diced Mushrooms, Portabella
8 oz Cheese
1 serving Red Hot Pepper Sauce
6 serving Whole Wheat Flour Tortillas

Recipe Directions for Black bean and corn quesadillas

  1. Rinse and drain black beans, put in large bowl. Thaw and drain corn, add to bowl. Dice mushrooms, add to bowl. Mince coriander leaves, add to bowl. Add cheese and hot sauce to bowl and mix with a spoon well.

  2. Divide evenly on 6 tortillas, fold in half and cook over medium heat until crisp. Flip and cook on other side until crisp. Slice and serve.
