mix enchilada sauce with 1/2 cup of salsa

Recipe Ingredients for black bean, corn, cheese enchiladas

1 cup enchilada sauce
1/2 cup salsa
3 cups grated cheese
1 cup black beans
1 box frozen chopped spinach
1 cup corn
6 scallions, thinly sliced, white and green parts separated
14 corn tortillas (6-inch)

Recipe Directions for black bean, corn, cheese enchiladas

  1. mix drained rinsed black beans with corn and 2 cups of cheese

  2. add 1/2 of sliced scallions - white only use green parts as garnish

  3. place mixture on top of spinach in tortilla - roll and place in pan

  4. put enchilada sauce with salsa over rolled tortillas

  5. top with 1 cup cheese

  6. bake at 400 degrees for 20 minutes
