Recipe Ingredients for Black Bean Coconut Rice

2 c brown rice
14 oz coconut milk
16 oz black beans
1 tbs fresh thyme
2 c vegetable broth

Recipe Directions for Black Bean Coconut Rice

Add coconut milk and vegetable broth to medium pot. Heat to boiling and add rice and thyme. Reduce heat and simmer until liquid is absorbed and rice is tender. Open can of black beans and rinse well. Mix with rice when done.
