Extremely yummy and works for South Beach Diet, all phases (smaller portion for Phase One, due to beans).

Recipe Ingredients for Black Bean Chili

42 oz Black Beans
16 oz 90% Lean Ground Sirloin
14.5 oz Diced Tomatoes
1 cup, chopped Onions
2 cup (8 fl oz) Soup, Beef Broth, Cubed
3 tbsp Tomato Paste
4 tsp Gourmet Collection Mexican Style Chili Powder
1 tsp Paprika

Recipe Directions for Black Bean Chili

  1. Drain and rinse 2 cans of black beans.

  2. Puree can of tomatoes and third can of beans, do not drain either (original recipe calls for chipotle chili pepper to be added here, but I didn't have any).

  3. Brown ground beef 90% Lean or less, with 1-2 T olive oil. Remove and saute the onions in 1-2 T olive oil until softened. Add chili powder and paprika and saute another 30 seconds.

  4. Add beef stock (I only had broth), browned beef, pureed bean mixture, drained beans and tomato paste.

  5. Salt and Pepper to taste, although salt is not really necessary (I also added more Chili powder, we like spicy foods).

  6. I simmered it for about an hour, but you can simmer longer or shorter, depending on desired consistency. Don't forget to stir regularly, or the bottom will burn!

  7. Top with fresh chopped cilantro and/or fresh chopped onion.
