Recipe Ingredients for Black Bean Chili

1 tbsp Olive Oil
3 cup, chopped Onions
6 clove Garlic
1 cup, chopped(149 g) Peppers, Sweet, Red
1/2 oz 1 lb. Bags Dried Ancho Chiles
2 tsp Paprika
3 tsp Cumin
0.5 tsp Pepper, Red Or Cayenne
4 large whole (3" dia) Tomatoes, Red, Ripe
16 oz Beef, Top Sirloin
3 pepper Peppers, Jalapeno
0.5 cup Coriander Leaves
6 oz Asiago
3 tsp Oregano
60 fl. oz 365 Black Beans - No Salt Added

Recipe Directions for Black Bean Chili

  1. Chop all vegetables.

  2. Toast cumin, cayenne, oregano and paprika in dry skillet until fragrant.

  3. Grind bay leaf and dried chile in a spice grinder (or clean coffee grinder).

  4. Saute onion, garlic and pepper until softening, 5 minutes. Add tomatoes and spice mixtures and cook, stirring occasionally, 15 minutes.

  5. Add beans and their liquid, plus water to just cover, and cook for 1 - hours.

  6. Grill sirloin to just medium rare (it will cook further in chili) and cut into small cubes. Add to chili along with jalapenos and cilantro and cook 10-15 more minutes.

  7. Garnish each serving with cheese.
