Recipe Ingredients for Black Bean Chili

2 T olive oil
1 medium onion, diced
1 t minced garlic
14 1/2 oz diced tomatoes
15 oz black beans
14 1/2 oz sliced carrots
14 1/2 oz fat free chicken broth
15 oz tomato sauce
1 cup frozen corn
2 T cumin
1 T chili powder
1 t cayenne pepper
1/2 t oregano
1/2 t basil
1/2 t thyme

Recipe Directions for Black Bean Chili

  1. Sautee onions in olive oil over medium heat; add garlic after four minutes and sautee until onions are translucent.

  2. Add all other ingredients and raise temperature to high. Bring to a boil.

  3. Reduce heat and simmer for one hour.
