This is how I make chili, because I can't stand kidney beans. To lower the sodium, use dried beans and soak them yourself instead of using canned.

Recipe Ingredients for Black Bean Chili

2 1/2 cups black beans
3 cups diced tomatoes
1 can tomato paste
2 cups diced mushrooms
1 cup chopped onion
1 tsp pepper
2 tbsp chili powder

Recipe Directions for Black Bean Chili

  1. Sautee onions and mushrooms slightly in a little bit of olive oil.

  2. Combine beans, tomatoes and tomato paste in a large pot. Add mushrooms and onions and stir. Add spices, simmer for 1-2 hours or until spicy enough for your taste. Add more spices to taste!
