Recipe Ingredients for Black Bean Chili

2 1/2 c. dry black beans
1 c. tomato sauce
6 tbs. tomato paste
2 t. lime juice
2 tbs. red wine vinegar
1 c. chopped onion
1 c. chopped celery
1 c. chopped green pepper
1 c. chopped tomatoes
1 (medium) jalapeno pepper
4 cloves garlic, chopped
1 tsp. fresh cilantro
1 1/2 tsp salt (or to taste)
1/4 tsp pepper
1 1/2 tsp. ground coriander
1 1/2 tsp. ground cumin
1 1/2 tsp. chili powder

Recipe Directions for Black Bean Chili

  1. Soak beans overnight or do quick soak

  2. Drain beans. Place in soup pot- cover with water. Bring to boil and cook for 1 1/2 - 2 hours.

  3. Stil in all ingredients. Continue cooking 45 min. to 1 hr.

  4. Top each serving with sour cream, if desired
