Slow Cooker from Cook's Country July 2008

Recipe Ingredients for Black Bean Chili

8 Bacon, slices chopped
2 Onions, chopped fine
2 Red Bell Peppers, chopped
2 Jalapeno Peppers, chopped fine
1/4 cp Chili Powder
2 tbs. Cumin
2 tbs. Oregano
5 cloves Garlic, chopped
6 cups Water
4 cups low sodium Chicken Broth
1 1/2 lbs. dried Black Beans, rinsed
1 1/2 lbs. boneless Ham
28 oz. tomatoes, canned diced
16 oz. black beans, can drained
3 tbs. Lime juice (2 limes)

Recipe Directions for Black Bean Chili

  1. Cook Bacon over medium heat till crisp about 8 minutes. Take out of pan and Use bacon drippings to cook Onions, peppers, and Jalapenos in bacon fat about 8 minutes. Transfer half of vegetables to bowl and put in refrigerator for later use. Add Chili powder, cumin, and oregano to pot with remaining vegetables cook until deeply fragrant, about 2 minutes. Add Garlic and cook until fragrant. Add water broth and 2 tsp. salt, dried beans and crisp bacon. Bring to boil and let simmer for 15 minutes.

  2. Transfer bean mixture to slow cooker and arrange aluminum foil on surface of liquid. Cover and cook on low until tender (7 to 9 hours).

  3. Remove lid, discard foil, and transfer ham to cutting board. Stir tomatoes into slow cooker, cover and cook on high until tomatoes are softened about 20 minutes. Put canned drained beans in bowl and mash with potato masher until ruff past formes. Chop ham into small pieces. Stir mashed beans, ham, lime juice, and refrigerated vegetables into slow cooker. Cook covered, until heated through, about 5 minutes. Season with salt. Serve.
