Creamy black bean and chicken soup

Recipe Ingredients for Black Bean & Chicken Soup

8 serving Black Beans
9 oz Chicken
3.5 serving Vegetable Tomatoes Petite Diced
2 small Squash, Summer, Zucchini, Includes Skin
1 medium raw Onion Yellow
3 oz Cilantro
3 cup Pepper Strips
4 tsp Garlic
24 oz Ready to Serve Chicken Broth

Recipe Directions for Black Bean & Chicken Soup

  1. Dice onion and sauté in deep pan with olive oil spray.

  2. Add garlic and continue to sauté.

  3. Add pepper strips, chopped cilantro, diced squash and continue sauting until all veggies are soft.

  4. Add canned tomatoes, juice and all.

  5. Add 3 cups chicken broth.

  6. Add 2 cans of rinsed black beans.

  7. Add diced chicken and continue to cook on high heat, cover and let cook for about 25 minutes.

  8. Remove chicken from the pot or pan and with an immersion blender, blend up the veggies being careful not to splatter yourself.

  9. Add chicken back into the pan/pot. If you wish, cut up one small lime and pour the juice into the soup. Mix, add additional salt and pepper to taste.

  10. For a thicker soup remove some of the veggies with the chicken before blending, or add a third can of black beans, though this will add additional calories to the recipe.
