Recipe Ingredients for black bean chicken chili

1 tbsp olive oil
1 lb chicken breast, skinless, boneless
1 med onion
1 med green pepper
1 med red bell pepper
4 tsp chili powder
2 tsp cumin
1/2 cup red wine
15 oz black beans
15 oz great Northern beans
15 oz diced tomatoes

Recipe Directions for black bean chicken chili

  1. Heat oil in large skillet on medium heat. Add cubed chicken, onion and peppers, cook until lightly browned.

  2. Heat small nonstick skillet on medium heat 2 minutes. Add chili powder, cumin, and garlic: toast 30 seconds stirring constantly. Add to chicken mixture.

  3. Stir in remaining ingredients. Bring to boil. Reduce heat to low simmer 20 minutes.
