Recipe Ingredients for Black Bean Casserole Ole

1 tbs olive oil
1 cup chopped onion
4 1/2 oz cornmeal
2 tsp chili powder
1 1/2 cup skim milk
16 oz black beans
16 oz whole kernel corn
16 oz canned tomatoes
4 oz chopped green chilies
1 oz low fat cheddar cheese

Recipe Directions for Black Bean Casserole Ole

  1. preheat oven to 350

  2. lightly oil an 8 inch square baking pan or spray with a nonstick cooking spray.

  3. In a large bowl, combine all ingredients, except cheddar cheese.

  4. Mix well. Place in prepared pan. Sprinkle with cheddar cheese.

  5. Bake, uncovered, 45 minutes.
