Recipe Ingredients for black bean butternut squash chili

1 1/2 cup White Hominy
3 cup Beans, Black, Mature Seeds
1 1/2 cup Food You Feel Good About Peppers
1 cup Couscous, Dry
30 grams Extra Virgin Olive Oil
2 cup Crushed Tomatoes
1 tbsp Cocoa, Dry Powder, Unsweetened
2 tsp Cinnamon, Ground
8 tsp Spices Ground Coriander
4 tsp Cumin
1 tsp, crumbled Bay Leaf
2 tablespoon Oregano
3 serving Chicken Flavored Stock
2 medium (2-1/2" dia) Onions
2 cup cubed Squash Butternut
10 pieces Garlic Cloves
2 tsp Paprika
4 tsp Chili Powder
1 tsp Sea Salt

Recipe Directions for black bean butternut squash chili

  1. Heat two tablespoons of olive oil over medium high heat in a dutch oven.

  2. You can use coriander and cumin seeds and grind them, or you can use already ground. I prefer a whole cinnamon stick to ground cinnamon. Toss in the coriander, cinnamon stick and cumin and stir around, toasting spices for 3 minutes.

  3. add onions, letting them cook down for 8 minutes.

  4. add 10 cloves of minced garlic. let cook for 2 minutes.

  5. broil peppers for 10 inutes, or until black.

  6. submerse peppers in cold water and peel off black skin. dice peppers.

  7. add the black beans, can of tomatoes, peppers,hominy, 1 box of chicken stock, and water or the black bean broth to dutch oven.

  8. add remaining spices.

  9. add cous cous and squash. let simmer for 30 minutes.

  10. salt and pepper to taste. can serve w cilantro.
