Recipe Ingredients for black bean burritos

55 3/10 grams White Onion
0.5 medium raw Bell Pepper Red
3 tablespoon Poblano Pepper
1 tbsp chopped Shallots
0.33 cup Corn, Sweet, Yellow
1 medium Tomatillos
0.25 cup, chopped Onions, Spring Or Scallions
2 cup Mild Diced Tomatoes and Green Chilies
16 oz Black Beans
4 tortilla Life Balance Whole Wheat Tortillas
0.5 cup, diced Mexican, Queso Asadero Cheese
1/2 medium Avocado
1 tbsp Chili Powder
1 tsp Garlic Salt

Recipe Directions for black bean burritos

  1. Heat large skillet to medium heat.

  2. Finely chop onion, bell pepper, poblano pepper, tomatillo and shallot.

  3. Add veggies to skillet with 1/4 cup of water and cook until tender.

  4. Add rotel tomatoes and stir together until liquid cooks off.

  5. Add black beans (drain off liquid before adding) and green onions along with seasonings.

  6. Heat tortillas between damp dish towels for 45 seconds.

  7. Add black bean mixture, cheese and avocado to warm tortilla and fold to serve.

  8. Enjoy.
