Recipe Ingredients for Black Bean Burritos

30 oz black beans, canned
1 med onion, finely chopped
2 cloves garlic, minced
1 tbsp chili powder
1 tsp ground cumin
1 tbsp olive oil
16 oz diced tomatoes
1 tsp dried oregano

Recipe Directions for Black Bean Burritos

  1. Cook onion, garlic, chili powder and cumin in hot oil until onion and garlic are tender.

  2. Stir in drained beans, undrained tomatoes, and oregano. Bring to boiling and then reduce heat to simmer about 15 minutes until thickened.

  3. Place about 1/4 to 1/2 c of bean mixture in flour tortilla, wrap and granish with shredded cheese, salsa, sour cream and/or guacamole.
