My favorite meal. I usually get a lot more servings out of it than four.

Recipe Ingredients for Black Bean Burritoes

4 whole wheat tortillas
1 tablespoon extra virgin olive oil
1 small onion, chopped
1 green bell pepper, chopped
1 teaspoon minced garlic
15 ounce black beans, rinsed and drained
1 jalapeno pepper
3 ounces cream cheese, Philadelphia Neufchatel 1/3 less fat
2 tablespoons chopped fresh cilantro

Recipe Directions for Black Bean Burritoes

  1. Microwave tortillas for 20 seconds or until heated through and soft.

  2. Heat oil in a 10-inch skillet over medium heat. Place onion, bell pepper, garlic and jalapenos in skillet, cook for 2 minutes stirring occasionally. Pour beans into skillet, cook 3 minutes stirring.

  3. Cut cream cheese into cubes and add to skillet. Cook for 2 minutes stirring occasionally. Stir cilantro into mixture. (If you find the mixture too dry adding a couple tablespoons of salsa usually does the trick.)

  4. Spoon mixture evenly down center of warmed tortilla and roll tortillas up. Serve immediately.
