Tasty low-fat vegan alternative to traditional burgers.

Recipe Ingredients for Black Bean Burgers

15 ounces black beans
15 ounces diced tomatoes
1 tsp minced garlic
1/2 cup onion
1 cup carrots
1 cup parsley
2 cups oatmeal
1/4 cup barbeque sauce

Recipe Directions for Black Bean Burgers

  1. Drain and rinse the black beans. Add all ingredients except oatmeal to food processor and blend until well mixed/chopped. Add oatmeal (about 2 cups of old fashioned) until a moldable consistency and bake at 400 degrees for about 10 minutes. Turn oven up to broil and broil burgers for about 2 minutes.

  2. Serve hot or freeze for later.

  3. I sometimes add whole kernel corn or substitute the BBQ sauce for tomato paste which makes them more rich.
