Alternative to a veggie burger and delicious!

Recipe Ingredients for Black Bean Burgers

2 tbsp. Extra Virgin Olive Oil
1 stalk celery, chopped
1 onion, finely chopped
1 clove garlic, minced
15 oz. black beans, rinsed and drained
1 large egg, lightly beaten
1 tbsp. cumin
1/2 cup plain bread crumbs
1 salt and pepper

Recipe Directions for Black Bean Burgers

  1. Preheat oven to 375 and spray baking sheet with Pam

  2. Warm oil in large skillet of medium-high heat.

  3. Add celery and onion and cook, stirring often, until softened, 3 to 5 minutes.

  4. Add garlic and saute 1 minute longer.

  5. Pour beans into a large bowl and use a potato masher to mash into thick paste.

  6. Scrape vegetables from skillet into bowl. Stir in egg, cumin, and bread crumbs. Season with salt and pepper.

  7. Use your fingers to form into 4 patties (do not overmixe).

  8. Place patties on baking sheet and bake until firm and set, about 10 mintues on each side.

  9. Serve on whole-grain buns with lettuce, tomato, and slices of onion, if desired.
