A surprisingly meat-like veggie burger.

Recipe Ingredients for Black Bean Burgers

1 lb. black beans
2 c mushrooms, baby portabella, chopped
1 Vidalia onion, chopped
1 green bell pepper, chopped
3 eggs
1/2 c bread crumbs
1 1/2 c all-purpose flour
4 tbsp olive oil
3 tbsp Worcestershire sauce

Recipe Directions for Black Bean Burgers

  1. Cook black beans according to package instructions.

  2. Put through food processor until mushy and set aside.

  3. Saute mushrooms, green pepper, and onion in 1 Tbsp olive oil until tender. Put through food processor and mix with black beans.

  4. Beat eggs with Worcestershire sauce and spices to taste (I like Southern charbroil seasoning). Mix into vegetable mixture and stir until coated.

  5. Stir in bread crumbs.

  6. Add flour 1/2 c at a time until mixture sticks together.

  7. Heat 1 Tbsp olive oil in pan and cook burgers. Use remaining olive oil as needed.
