Recipe Ingredients for black bean burgers

3 cup Black Beans, Organic
2 cup Chopped Onions
1 tsp Chile Powder
1 tsp Salt, Table
1/4 tsp Spices Ground Black Pepper
1 1/2 cup Short Grain Brown Rice
1 1tsp Olive Oil
16 tbsp Pumpkin Seeds (Raw)
3 tsp Paprika
1/2 medium raw Onion Red
1 avocado, NS as to Florida or California Avocados

Recipe Directions for black bean burgers

  1. Saute onions. Put beans, onions, chipotle powder and pepper in large saucepan. Add 1/2 cup water and bring to a boil. Lower the heat and let cool.

  2. Put the rice and a pinch of salt in a suacepan and add the water. Bring to a boil, then decrease the heat, stir once, cover, and simmer untill all of the rice is tender (about 35 to 40 minutes). Remove from heat and let stand (covered) for 10 minutes.

  3. Heat olive oil in saute pan over medium high heat. Add the pumpkin seeds, paprika, and the remaining 1 teaspoon of salt and season with pepper. Cook the pumpkin seeds stirring and shaking the pan, until they are lightly toasted (3 to 5 minutes). Set aside to cool.

  4. Combine the rice, beans and pumpkin seeds in large bowl. Transfer half the mixture to a a food processor fitted wtih the metal blade and process until smooth, addign the reserved cooking liquid from the beans as meedt to keep the mixture moist enough to stick together.

  5. Return the mixture to the bowl, mix everything together, and form patties about 3 1/2 inches in diameter and 1 inch thick.

  6. To bake burgers, preheat overn to 350F. Brush a baking sheet with olive oil and place burgers on it. Brush the burgers with oil and back until browned (20 to 30 minutes total), turning the burgers halfway through cooking.

  7. Grill onion slices for 3 mins each side and put on top with avocado slices.
