Very moist flourless brownies. Also taste delicious with walnuts or pecans (my kids like peanuts, so that's what I use). Nuts not necessary (for school etc. where it's not allowed.)

Recipe Ingredients for Black Bean Brownies

15 1/2 oz canned black beans
3 eggs
3 tbsp oil
1/4 cup cocoa
1 tsp vanilla
1/2 cup sugar
1 tsp instant coffee (optional)
1/2 cup chocolate chips
1/4 cup peanuts

Recipe Directions for Black Bean Brownies

  1. Preheat oven to 350F. Lightly grease (or use parchment paper) 8x8 sq. dish.

  2. Combine all ingredients except chocolate chips /nuts in blender, blend until smooth. (add optional teaspoon inst. coffee).

  3. Pour into baking dish. Sprinkle chocolate chips or nuts on top.

  4. Bake for 30 mins or until edges start to pull away from sides of pan.
