Yet another version of Black Bean Brownies, from Spark People.

Recipe Ingredients for Black Bean Brownies

15 ounces black beans (drained & rinsed well)
1 cup egg beaters
1/2 cup Splenda granular
3 tbsp baking cocoa
1 tbsp instant coffee
1 tsp baking powder
2 tbsp extra virgin olive oil
1 tsp vanilla

Recipe Directions for Black Bean Brownies

  1. Preheat oven to 350*F.

  2. Prepare an 8x8 baking pan by spraying it with cooking spray.

  3. Dissolve instant coffee in 1 tbsp of hot water.

  4. Mix all ingredients EXCEPT beans in a food processor or blender.

  5. Add the beans last and make sure you blend VERY well.

  6. Bake for 30 minutes, or until toothpick comes out clean.

  7. Allow to cool before slicing.

  8. Brownies are approx. 2"x2" in size.
