Flourless brownies made with black beans. IMPORTANT NOTE: use only 1/2 cup of xylitol--calorie count has its xylitol info wrong, so in order to accurately record the calories I had to input 24tbsp of xylitol. Alternately, you could just use 3/4c sugar. (courtesy of allrecipes.com, with some minor alterations)

Recipe Ingredients for Black Bean Brownies

15 1/2 ounce black beans, rinsed and drained
7 egg whites
2 scoop Natural
1/3 cup cocoa powder
2 teaspoon vanilla extract
1/2 cup sucralose
1/2 cup Xylitol
2 tsp instant coffee
1/4 cup chopped walnuts
1/4 cup Semi-Sweet Mini Morsels
1/2 cup FAGE Total 0%
1 tsp baking powder

Recipe Directions for Black Bean Brownies

  1. 1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 square baking dish.

  2. 2. Combine the black beans, eggs, applesauce, cocoa powder, salt, vanilla extract, sugar, xylitol (note: 1/2 cup, NOT 24 tbsp), and instant coffee in a blender; blend until smooth; pour the mixture into the prepared baking dish. Sprinkle the chocolate chips and chopped nuts over the top of the mixture.

  3. 3. Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.
