I've tried other recipes, and the texture was off. This is my take on making the brownie a little more nutritious.

Recipe Ingredients for Black Bean Brownies

1 1/2 cups black beans, (1 can) rinsed and drained
3 eggs
1/4 cup Smart Balance oil
1 cup sugar
1/3 cup cocoa powder
1/3 cup soy flour
1 tbsp flax seed
1 tsp vanilla
1 tsp baking soda
1/2 tsp instant coffee
1/4 tsp salt
1/4 cups semi-sweet chocolate chips

Recipe Directions for Black Bean Brownies

  1. Puree the black beans in a blender with the eggs and oil.

  2. Stir in remaining ingredients, except the chocolate chips.

  3. Pour into a greased 9x9 baking pan. Sprinkle chocolate chips on top.

  4. Bake in a 350 degree preheated oven for 35-40 minutes, or until toothpick inserted in center comes out clear.

  5. Remove and cool. Brownies will fall slightly as they cool.
