Recipe Ingredients for Black Bean and Brown Rice Casserole

1/3 cup brown rice
1 cup chicken broth
1 T extra virgin olive oil
1/3 c onion, diced
1 zucchini, diced
8 oz chicken breast
1/2 cup sliced mushrooms
30 oz black beans, drained
4 oz green chiles
1/2 tsp cumin
1/3 c carrots, shredded
1 c mozzarella cheese
15 oz tomatoes, diced

Recipe Directions for Black Bean and Brown Rice Casserole

  1. Mix the rice and broth in a pot and bring to a boil. Reduce heat to low, cover and simmer until rice is tender.

  2. Preheat oven to 350 degrees. Lightly greese a 9X13 pan.

  3. Heat the olive oil in a skillet over med heat and cook the onion until tender. Mix in the zucchini, chicken and mushrooms. Season with cumin, ground cayenne pepper and salt to taste.

  4. In a large bowl, mix all ingredients.

  5. Transfer to pan, cover with foil and bake 30 minutes.
