With black beans and white northern or navy beans, the salad/side dish is both fresh and filling. Add additional tomato or chopped sweet peppers for more color.

Recipe Ingredients for Black Bean & Avocado Salad

15 oz can black beans
15 oz can beans, white, low salt
10 oz avocado, about 3 small
3 oz tomato
1 T lemon juice
1 T lemon zest
1/4 t salt
1/4 t cumin

Recipe Directions for Black Bean & Avocado Salad

  1. Rinse beans to remove excess salt. Toss together with chopped avocado, tomato and seasonings.

  2. Carefully toss together.

  3. Serve.
