Makes 10 servings

Makes about 7-1/2 dozen 1-1/2" size cookies.

Recipe Ingredients for Bizcochitos

2 T brandy, or water
1 t anise seed
1 c butter
3/4 c sugar
1 egg
1 t baking powder
3 c flour
1/4 c sugar
1 t cinnamon

Recipe Directions for Bizcochitos

  1. In a small bowl, mix brandy with anise. Cover and let stand at least 20 minutes.

  2. In a large bowl, beat butter and sugar with mixer until fluffy, then beat in egg and brandy mixture. Mix in baking powder and flour. Cover and chill dough until firm, at least 2 hours or up to 2 days.

  3. On a floured board, roll half the dough at a time to 1/8" thick (keep balance chilled; dough is hard to handle as it warms and softens.) Cut shapes with floured cookie cutters. Place cookies about 1" apart on greased 12 X 15" baking sheets. Sprinkle with sugar and cinnamon, mixed together. Bake 2 pans at a time in a 350-degree oven until golden, 12-15 minutes; switch pan positions halfway through baking. Tranfer cookies to racks to cool.

  4. Serve cookies, or package airtight and hold up to 2 days; freeze to store longer.
