Healthy boca meat mixed with herbs/spices served on spinach leaves and topped with melted string cheese.

Recipe Ingredients for Bite-Sized Vegetarian "Meatloaf" Muffins

0.75 serving panko breadcrumbs japanese [fixed]
1 serving Vegan Burgers
0.25 serving Fat Free Skim Milk
1 tbsp Ketchup
11 4/5 grams Cheese
1 tsp Garlic Powder
1 serving Chopped Onion Flakes
1 cup Spinach Leaves

Recipe Directions for Bite-Sized Vegetarian "Meatloaf" Muffins

  1. Preheat oven to 375 or 400 degrees Fahrenheit.

  2. Ground the boca in a medium sized bowl.

  3. Add the milk and mix it with your hands so the boca absorbs it.

  4. Add the dehydrated onion (you can also use fresh onion if you want, but it was faster, just make sure you cook it longer).

  5. Add the ketchup (you can use as much as you like; I'm a big ketchup fan).

  6. Mix everything together; set aside.

  7. Get a muffin pan. (Preferably a 24 muffin serving size. It makes the meatloaf muffins bite size.)

  8. Spray the pan with nonstick cooking spray.

  9. Place one spinach leaf for every muffin you are making inside the muffin cups.

  10. Position the spinach so it creates a bowl like structure.

  11. Sprinkle enough breadcrumbs in the base of the spinach so it covers the leaf.

  12. Spoon out the boca mixture and place it in the muffin cups.

  13. (If you want the tops to be a little cripsy, sprinkle a little breadcrumbs on top, but not too much.)

  14. Cut the string cheese in half, you don't need the whole thing (personally, I'm not big on cheese, I think there's too much fat).

  15. Take strings of cheese and place them on top of the muffins.

  16. Now, put the muffins in the oven and let them cook for about ten minutes, or until the boca is fully cooked and the cheese is melted.

  17. You can serve it with ketchup or eat it like it is. Enjoy!
