General purpose meatball for sandwiches and pasta. 1 serving is approximately 6 meatballs (25 grams each after cooking, or 1/8 cup).

Recipe Ingredients for Bison Meatballs

4 pounds ground bison
16 ounces frozen spinach
1 teaspoon salt
6 cloves garlic, minced
8 slices light bread, toasted and diced
3/4 cup celery, minced
6 tsp parsley, fresh finely chopped
2 tsp ground psyllium
2/3 cup water
1 red pepper flakes, to taste

Recipe Directions for Bison Meatballs

  1. Combine ingredients, mixing thoroughly.

  2. Form into meatballs, using 1/8 cup measure.

  3. Let rest in fridge for an hour, if possible.

  4. Broil in oven on for about 7 minutes.
