Every once and a while I get a yen for fresh biscuits and soft boiled eggs, topped with grated cheese, sliced avocado and onion, When the urge hits, this is what I make.

Recipe Ingredients for biscuits

1 1/2 cups white flour
4 tbs vegetable oil
1/2 tsp salt
2 tsp. baking powder
1/2 tsp baking soda
1/2 cup fat free yogurt
1/4 cup milk

Recipe Directions for biscuits

  1. sift dry ingredients

  2. add oil and work between palms until mix has a granular texture.

  3. add yogurt and milk

  4. beat lightly to combine

  5. pat or roll to 1/2 inch thick on a floured surface

  6. cut to desired shape and bake in a 400 degree oven until brown, about 15-20 minutes
