Recipe Ingredients for Biscuit-Topped Chicken Pie

Pie Filling:
1/4 cups country crock
1/4 cups all-purpose flour
1/4 cups chopped onion
1/3 tsp salt
1/8 tsp black pepper
1.16 cups chicken broth
0.44 cups skim milk
1 3/10 cups chicken breast, cubed
6.67 oz frozen peas and carrots

Biscuit Topping:
3/4 cup flour
2 tsp baking powder
1 tsp sugar
1/8 tsp salt
5/8 cups skim milk
1/2 tsp garlic powder
1/4 tsp celery seed

Recipe Directions for Biscuit-Topped Chicken Pie

  1. heat country crock over low heat until melted

  2. blend in flour, onion, salt and pepper

  3. cook over low heat, stirring constantly, until mixture is smooth and bubbly

  4. remove from heat

  5. stir in broth and milk

  6. heat to boiling, stirring constantly

  7. boil and stir 1 minute

  8. stir in chicken and frozen vegetables and set aside in baking dish

  9. mix together all ingredients for biscuit topping (mixture may be thin) and spoon evenly over filling

  10. Note: as this recipe is a combination, and I haven't yet made it, I'm unsure of the baking temperature. The recipe for the filling (which calls for an actual crust) bakes uncovered for 30 minutes at 425. The recipe using a biscuit topping bakes uncovered for 30 minutes at 350. Take your pick...
