Italian Biscotti - Flavor with Almond, anise or other extract

Recipe Ingredients for Biscotti

105 grams Vegetable Oil, Canola
500 grams Wheat Flour, White, All-purpose, Enriched, Unbleached
220 grams Sugars, Granulated
160 grams Egg, Whole
3 teaspoon Baking Powder

Recipe Directions for Biscotti

  1. Preheat oven to 375F. Line 2 cookies sheets with parchment

  2. In a medium bowl, beat together eggs, oil, sugar and flavoring extract.

  3. Combine the flour and baking powder, stir into egg mixture to form a heavy dough.

  4. Divide dough into 2 pieces

  5. Form each piece into a long roll the length of the cookie sheet.

  6. Place the dough onto the cookie sheet and flatten to about 1/2-inch thickness.

  7. Bake for 25-30 minutes until golden brown.

  8. Remove from pan to wire rack for cooling.

  9. When cool enough to handle, cut into 1/2-inch thick slices.

  10. Place slices back on cookie sheets and bake again 6-10 minutes.

  11. Remove from oven, turn slices over and bake again for 6-10 minutes.

  12. Remove to wire racks and cool completely before storing.
