Makes 36 servings



a toasted Italian cookie that is twice backed. Low in sugar and good with hot cup tea or coffee

Recipe Ingredients for Biscotti

4 cups flour
1/2 cup sugar
3 tablespoons vanilla
1/4 cup oil
4 eggs
4 teaspoons baking powder

Recipe Directions for Biscotti

  1. combine dry ingredients (except sugar) and sift

  2. combine eggs, oil, vanilla and sugar, mix with beater until foamy

  3. add flour mixture and mix

  4. bring out to floured surface

  5. kneed until soft dough

  6. divide dough in half and half again

  7. form 4 logs and then flaten the top

  8. back until golden brown 350 degrees

  9. slice on an angle the bake again until toasted
