Home made biscott's. Change the Vanilla Extract to any flavored extract you like. You can add cherries, almonds, nuts, dry cranberries....you can dip in dark chocolate once cooked. Not in the recipe noted above but you can add confectioners sugar to top after cooked for a little extra sweetness. Take about 4 tablespoons of confectioners sugar, add water slowly while stirring. Once done, spoon over tope of the Biscotti. Let dry then cut biscotti to cookie size.

Recipe Ingredients for Biscotti by Janice

1/2 cup vegetable oil
1 cup white sugar
3 cups all-purpose flour
3 eggs
1 tablespoon baking powder
1 tablespoon Vanilla Extract

Recipe Directions for Biscotti by Janice

  1. Preheat oven to 375F (190C). Grease cookie sheet or line with parchment paper.

  2. Beat together oil, eggs, sugar and flavoring until well blended. Add baking powder and slowly add in the flour - continue mixing and folding which will form a heavy dough (may be sticky). Divide dough into two pieces. Form each piece into a roll, place on cookie sheet and press down to about 1/2 inch thickness.

  3. Bake for 25 to 30 minutes until golden brown. Cool on a wire rack. Once cooled, you can then add a frosting for the top or dip in chocolate, etc. If desired, you can cut the cookies crossiwse into 1/2 inch slices. Place the slices cut side up back onto the baking sheet and bake for an additiona 6 to 10 minutes to get them lightly toasted. When toasting, check often so you don't burn them.
