Options: Brush the top of the loaves with egg white about 10 minutes before they're done. This makes them shiny and prevents cracking. You can also sprinkle sugar over the egg white for a very finished look. Or you can melt white chocolate chips (Guittard are the best) in the microwave and dip one end in. Or drizzle over cookie.

Recipe Ingredients for Biscotti, Cranberry Pistachio

1/4 c olive oil, light
3/4 c granulated sugar
2 t vanilla extract
1/2 t almond extract
1 T orange zest
2 egg whites
1 3/4 c flour
1/8 t salt
1 t baking powder
1 c cranberries, dried
1 c pistachio nuts

Recipe Directions for Biscotti, Cranberry Pistachio

  1. Preheat the oven to 325.

  2. In a large bowl, mix together oil and sugar until well blended. Mix in the extracts and zest, then beat in the egg whites. Combine flour, salt, and baking powder; gradually stir into egg mixture. Mix in cranberries and nuts.

  3. Divide dough in half. Form two logs (12x2 inches) on a cookie sheet lined with greased parchment. Sticky; so wet hands with cool water or plop onto greased parchment.

  4. Bake 35 minutes, or until logs are light brown. Remove, cool for 10 minutes covered with a towel to minimize crumbling and cracks.

  5. Cut (straight down ? don?t saw ? use regular knife) logs on diagonal into ? thick slices. Lay on sides on parchment covered cookie sheet. Bake approximately 8 to 10 minutes, or until dry; cool.

  6. These freeze beautifully as well. If you don't eat them all!
