Egg, cheese, and turkey bacon cups. Makes for a lovely presentation.

Recipe Ingredients for Bird's Nest Breakfast Cups

12 oz turkey bacon
1 cups egg substitute
6 tablespoons shredded cheddar cheese
1 tablespoon minced fresh parsley

Recipe Directions for Bird's Nest Breakfast Cups

  1. In a large skillet, cook bacon over medium heat for 2 minutes on each side or until partially set, but not crisp.

  2. Slice the strips length-wise down the middle to form two strips.

  3. Coat 12 muffin cups with cooking spray.

  4. Wrap two bacon strips around the inside of each cup.

  5. Fill each cup with 1/6 cup egg substitute; top with cheese.
