Recipe Ingredients for Biltmore Gingered Sweet Potato Mash

2 pounds sweet potatoes, peeled and chopped
1/2 cup heavy cream
2 tablespoons butter
1 tablespoon grated ginger
1/4 cup honey
1 Salt and pepper to taste

Recipe Directions for Biltmore Gingered Sweet Potato Mash

  1. Combine the sweet potatoes with enough cold water to cover in a large saucepan and cook until the potatoes are tender.

  2. Combine the cream and butter in a saucepan and bring to a simmer, keep warm.

  3. Drain the sweet potatoes.

  4. Combine with the ginger and push through a food mill or ricer.

  5. Mix with the warm cream mixture and honey in a bowl.

  6. Season with salt and pepper.
