A very simple vegetable soup with a vegetable and tomato juice base. You can use no salt added diced tomatoes and lower sodium vegetable and tomato juices. Great for freezing and heating up for a quick meal.

46 oz vegetable juice
10 oz chopped onion
16 oz frozen corn
16 oz frozen green peas
16 oz frozen green beans
16 oz frozen okra
16 oz frozen lima beans
43 1/2 oz diced tomatoes canned

  1. combine all ingredients in a large pot.

  2. season with garlic powder, black pepper, oregano, and basil to taste.

  3. simmer till vegetables are done.
