More Delicious than a multivitamin. This soup gets a lot of its nutrition from the herbs funnily enough! Not just for flavouring they have many other benefits as well.

Recipe Ingredients for Biggy Vitamin Medicine Soup

2 cups broccoli
1 cup kale
1/2 cup red pepper
4 mushrooms, shittake
1 small zucchini, roasted
1 cup of pumpkin puree
4 cloves garlic, roasted
2 tablespoons pumpkin seeds
1 cup parsley, fresh
1 tablespoon savory, ground
3 leaves basil, fresh
1 tablespoon marjoram, ground
1 tablespoon thyme, fresh
1/4 cup rosemary, fresh
1 tablespoon sage, dried

Recipe Directions for Biggy Vitamin Medicine Soup

  1. Soak the pumpkin seeds for an hour to soften them (or you can use an equal amount of pumpkin seed butter). Soaking them makes them more digestible.

  2. Roasting the vegetables beforehand gives a richer flavour. Blanch the kale and broccoli before putting them in the oven. While the veggies and garlic are roasting, prepare the soup stock by simmering the herbs in 2 cups of water. Add more if necessary.

  3. Blend all ingredients including stock, roasted veggies and pumpkin seeds.
