Recipe Ingredients for Biggest Loser Pork Stir-Fry w/Garlic Broccoli

3 c broccoli, chopped
3/4 c chicken broth, low-sodium fat free
1/2 c scallions chopped
2 tbsp garlic, chopped
2 tbsp ginger, peeled & chopped
2 tsp olive oil
1 c yellow onion, chopped
1 red bell pepper, chopped
1 lb pork tenderloin, w/o bone, sliced 1/2"x2'
1 tbsp soy sauce, low sodium
1 tbsp sesame seeds, toasted

Recipe Directions for Biggest Loser Pork Stir-Fry w/Garlic Broccoli

  1. Steam broccoli till bright green but firm

  2. Mix 1/4 c of broth w/scallions, garlic & ginger in a food processor till minced.

  3. Heat 1 tsp oil in large skillet med-high heat, cook onions & peppers 5 minutes, then transfer to plate & cover to keep warm. Add rest of oil to pan and cook scallion mixture for a minute, then add pork and soy sauce to pan, cook x 4 minutes. Add remaining broth, bring to boil, add the broccoli for 3 minutes, add onions & peppers to skillet, can garnish w/sesame seeds.
