Recipe Ingredients for Biggest Loser Egg Foo Yung

2 tsp olive oil (divided)
1/2 c cabbage, finely shredded
1/4 c mushrooms, finely sliced
1/4 c carrots,finely sliced
2 tbsp scallions, finely sliced
2 tbsp red bell pepper, chopped
1 tsp garlic, chopped
1 tsp fresh ginger, finely chopped
6 egg whites
1 egg
2/3 tsp black pepper
2/3 c turkey or chicken, pork, shrimp, diced
1 tbsp scallion

Recipe Directions for Biggest Loser Egg Foo Yung

Spray pan w/ half of the olive oil, place on med/high heat to cook first 8 ingredients for minutes then transfer to bowl to cool. Beat the eggs & add vegetables, turkey and pepper to the eggs, stir to combine, return pan to med/high heat w/another spray of olive oil and pour mix in pan & cook for 1 minute or till edges set, then cover and reduce heat to low/med for 2-3 more minutes till center sets, remove from heat covered and let rest for 1 minute. Flip over as an omelet using spatula to remove crust w/egg. Cut in half and serve.
