  1. INGREDIENTS

  2. 2 1/2 cups all-purpose flour

  3. 2 teaspoons ground ginger

  4. 1 teaspoon baking soda

  5. 3/4 teaspoon ground cinnamon

  6. 1/2 teaspoon ground cloves

  7. 1/4 teaspoon salt

  8. 1/2 cup no or low trans fat tub margarine (i.e., Land O Lakes Buttery Spread)

  9. 1/4 cup maple syrup or lite pancake syrup

  10. 3/4 cup white sugar

  11. 1 egg

  12. 1/4 cup molasses

  13. 2 tablespoons sugar crystals

  14. DIRECTIONS

  15. Preheat oven to 350 degrees F (175 degrees C). Lightly coat a cookie sheet with canola cooking spray.

  16. Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.

  17. In a large bowl, cream together the margarine, maple syrup, and 3/4 cup sugar until light and fluffy. Beat in the egg, then beat in the molasses. Gradually stir the sifted ingredients into the molasses mixture.

  18. Use a cookie scoop to place cookie dough balls 2 inches apart onto the prepared cookie sheet (don't worry about flattening the dough - it will spread out nicely during cooking).

  19. Bake for about 10 minutes in the preheated oven. Remove cookies to a wire rack to cool completely. Store in an airtight container.
